Preheat oven to 400* Fahrenheit.
Rinse off squash and wipe dry. Cut off each end of vegetable. Peel. Cut vegetable in half length-wise. Use spoon to scoop out seeds from core.
Cut each section in half width-wise. Then cut these four sections into smaller strips length-wise (trying your best to keep them consistent in size for even baking).
Throw in a mixing bowl and add a bit of coconut oil, tossing until well coated. Add seasonings of choice and toss until evenly coated.
Line two baking sheets with parchment paper and evenly space your butternut squash fries out on pans. Cook at 400* Fahrenheit for 55 to 60 minutes, flipping once through baking time, until edges begin to brown and crisp. Baking times may need to be slightly adjusted based on size of fries.
Allow to cool a few minutes before removing from pan. Enjoy!
